Malt Vinegar Potato Chips

  • 4 medium Yukon gold or red potatoes, scrubbed (about 2 1/2 pounds)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • Malt vinegar, for drizzling

Directions

  1. Heat oven to 425 degrees. Place two baking sheets in the oven, and let heat for about 10 minutes.
  2. Slice the potatoes into 1/4-inch-thick rounds. Toss the potatoes with the olive oil, salt, and pepper.
  3. Remove baking sheets from oven, and arrange potato slices on sheets in a single layer. Bake until the potatoes are golden on the bottom side, about 30 minutes. Turn potatoes over, and bake until golden brown all over, about another 15 minutes. Remove from oven, drizzle with vinegar, and serve immediately.

Homemade Soft Pretzals

In a small bowl mix:
4 t. yeast
1 t. brown sugar
1 ¼ c. warm water

Dissolve yeast and let stand 10 minutes.

In a large bowl combine:
4 c. flour
½ c. white sugar
1 ½ t. salt

Make a well in center of dry ingredients and add 1 T. veg. oil and yeast mixture. Mix well. Knead 7-8 min. Place dough in a lightly oiled bowl and cover. Let rise 1 hr. Preheat oven to 400 degrees.

Divide dough into 12 pieces. Roll into long ropes. Shape into pretzels.

In a pan, bring 1 c. water and 1 T. baking soda to a boil. Dip pretzels in boiling water for 5 seconds. Place on a greased baking sheet. Sprinkle with course salt. Bake 8 min. Dip in melted butter when done cooking and sprinkle on more salt, garlic salt or cinnamon sugar, etc.

*Hot dog pretzels:Instead of shaping into pretzels, wrap dough around hotdog and dip in water. Then bake.

Orangey Bananas

Ingredients:

2 large bananas
1 Tbsp frozen orange juice
1 tsp sugar

*Peel and slice up the bananas.
*Mix the concentrate and sugar and stir into bananas.

Caramel Popcorn

2 cups brown sugar
2 cubes butter
1 cup karo syrup
Pinch salt
2 bags popcorn, popped--no old maids

Melt together 3-5 minutes on stove stirring often. Remove from heat and add 1 can sweetened condensed milk.

For 2 people, ½ the recipe!!! (so 1 bag of popcorn)

****I did mine in the microwave, stirring occasionally until the sugar is all dissolved.

Pink Popcorn

2 quarts popped popcorn
3 tablespoons butter
4 tablespoons strawberry flavored Jell-O
1 ½ cups miniature marshmallows

In a medium saucepan, melt butter over low heat. Stir marshmallows into melting butter. Let them soften, but not melt completely. Add the Jell-O. Stir until butter/marshmallow mixture is evenly colored. Jell-O does not have to be dissolved. Drizzle over popcorn and mix well.
