Homemade Mac & Cheese

Bring a large saucepan of water to a boil. Add 1 1/2 cups of macaroni and boil until tender. Make a medium white sauce by melting 2 T. butter in saucepan, stir in 2 T. flour, gradually add 1 cup of milk. Stir until slightly thickened and add 1 c. shredded sharp cheddar cheese. Drain pasta and add to cheese mixture and season to taste with salt, pepper and paprika.

Sandra's Delight

Brown 1 lb. of hamburger with salt and pepper and 1 onion chopped. Boil salad macaroni noodles in salted water. Drain. Add to meat mixture. Add in 1 can tomato paste with a little bit of water. Mix together well. Add shredded cheddar cheese to mix in. Top with more cheese before serving. It is nice to make one big batch and then every time you reheat it, just add a little Prego spaghetti sauce to "freshen" it up. This is one of the very few things my daughter will eat!

Sloppy Joes

1 lb. hamburger
1 med. onion (optional)
2 1/2 T worcestershire sauce
1/3 C brown sugar
1/2 C ketchup
1 T mustard
1 can cream of mushroom

Brown the meat (cook with onions if you are using them). Add the other ingredients (be sure to stir the cream of mushroom well at the end). Serve on hamburger buns.

Biscuits & Gravy

1 pound sausage (crumbled)
1/4 cup all-purpose flour
4 cups milk
Salt and black pepper to taste
8 prepared biscuits

DIRECTIONS
Crumble and cook sausage in large skillet over medium heat until browned. Stir in flour until dissolved. Gradually stir in milk. Cook gravy until thick and bubbly. Season with salt and pepper. Serve hot over biscuits. Refrigerate leftovers.

Crispy Chicken Wraps

1 Tyson Crispy Chicken Strip (click here for info)
1 tortilla
handful of pre-washed salad mix
sprinkling of cheese (whatever you have in the fridge)
ranch dressing (or honey mustard, or other favorite)

Prepare chicken strip according to package directions. (I microwave it for 3-4 minutes, then place under the broiler for a few minutes until crispy.) Roll all ingredients up in your tortilla and that's it!

Quicker Calzones

9 Rhodes Rolls, thawed, but still cold
1/4 c. chopped ham
1 c. mozzarella cheese
1/4 c. mushrooms, diced
1/4 c. diced pineapple chunks
1 c. heated pizza sauce

Mix ham, cheese, mushrooms and pineapple in bowl. Set aside

Preheat oven to 350. Flatten each roll, and roll out to 8" circles. Place 1/4 c. filling onto half of roll. Fold roll in half, seal edges with fork. Place on greased cookie sheet, and bake for 20-25 minutes. Serve with pizza dipping sauce. Don't add the sauce inside the calzone, it makes the roll not cook correctly. You can substitute any toppings you want. We made the ham & pineapple ones, and also did a vegetarian one with fresh tomatoes, mushrooms, onions and cheese.

Quick Calzones

Must have ingredients:

1 Pillsbury pizza crust dough (in a can, by the biscuits)
Mozerella cheese
Pepperoni (or turkey for a heathier version)
Any type of spaghetti sauce

Other optional ingredients:

Black or green olives
Onion
Jalepenos
Sun dried tomatoes
Minced garlic
Bell pepper
Italian sausage
Hambuger meat
Ham
Pineapple
or any other pizza topping that you enjoy!

-Unroll your pizza dough and cut into four squares.
-Take each square and place on your greased baking sheet. Imagine the square in two triangles. In one of those spread the dough out a little.
-Lay 6 pepperoni on that triangle area
-Put 2 regular spoonfulls of your spaghetti sauce
-Sprinkle cheese on top
-Fold the other half over and pinch it closed like you would a turnover.
-Then follow the instructions for the pizza crust on the can. I beleive it is about 12-15 min at 375 degrees.

Easy to make a kid friendly meal, but spice yours up at the same time with some extra stuff.

Creamed Tuna & Peas

White Sauce:
1/4 c butter
1/4 c flour
2 cups milk
*Melt butter, stir in flour and mix until hot. Then add milk all at once, stirring. It helps if you heat up the milk in the microwave beforehand (less lumps).

Cream Tuna and Peas Sauce:
1-2 tsp chicken bullion
Salt and Pepper
1 can tuna
1 bag frozen peas.
*Add all ingredients to the white sauce. Mix well and heat until peas are thawed. Serve over broken up toast.

Jennifer's Ham BBQ

1 pound thin sliced deli ham
2 tablespoons butter
ketchup
sweet relish (dill works too, though)

Chop the ham into small pieces. Melt butter in a saucepan. Add ham and squirt in enough ketchup to coat the meat. Add some relish (I have no idea how much---maybe two spoonfuls??). Cook until the sauce starts to bubble. Serve on hamburger buns.

Tuna Burgers

6 Hamburger Buns
7 oz. tuna
1 c. chopped celery
1/2 c.+ grated cheese
1/2 c. chopped olives
1/4 c. mayo
1 small onion (optional)

Add salt & pepper to taste. Wrap in foil. Bake at 375*F for 15 minutes, or until cheese is melted. What is great about this recipe, is you can stretch it further with whatever you have such as more of: celery, cheese, olives...etc.

Quick Ham Sandwich

1 lb. deli ham
1 lb. swiss cheese or cheddar
8 hamburger buns

Sauce:
1/2 stick butter
1 T. mustard
dash of Tabasco
1 T. grated onion [1/8 t. onion powder]
1 T. poppyseeds

Melt sauce together in pan or in microwave. Put on top and bottom of buns. Layer with ham and cheese. Wrap in foil. Bake at 450*F for around 15 minutes, or until cheese is melted.
